I just baked my favorite gluten-free rolls and like to share the recipe with you:
You can start with the amount of 600g (2 1/2 cups, 24oz) flour, and 600g water.
I have tripled this amount lately and freeze the rolls for storage.
CHIA - OAT - SORGHUM ROLLS:
Mix 300g oat flour, 300g sorghum flour, 1 cup chia seeds, 2 tsp salt, 1 tsp xanthan gum, 1 tsp yeast, 1 cup sourdough with 600ml warm water.
The dough has to be really soft .... kind of dropping off your hand ... therefore, play with the amount of water! You can substitute part of Oat and Sorghum with Teff flour or Amaranth flour. Make the rolls small, see the photo below! :)) Enjoy!
